Perennial, the plant is grown, especially as a biennial or trisennial. Reproduction by seed has a more random character than by carnations. The artichoke has an upright stem up to 2 m high, thick and fluted, with large leaves of varying sizes on the same foot: the upper pennatifid, lobed or almost entire, the other pennatipatites. The edible part is a flower head, inflorescence harvested before the flowers develop. What is called artichoke background is the floral receptacle of this inflorescence; as for the leaves, whose base is consumed, they are the bracts of the involucre. When the artichoke is allowed to develop, a “flower” is formed at its top, whose color varies from blue to purple. Since the artichoke is a compound plant, it is not a “one” flower, but a set of flowers (the flower head). Each flower (or floret) comes in the form of a tuft of hairs called an egret having a tiny ovary (future fruit) at its base. It is all of these florets that constitute the hay—also called beard—of the artichokes that we consume. The seeds are harvested after the flower has completely dried out.
