From the Asteraceae family, the matrium is an aromatic plant of bitter flavor. Chamomile flower, also known as the German matrium or chamomile, is a small annual plant 20 to 50 cm high, with tiny flowers grouped in domed flower heads exhaling a deep smell. The harvest is done in full bloom using a comb, and the flower heads are then dried on very well ventilated racks protected from light.
