All children are familiar with the 30 cm tall plant and its characteristic leaves that resemble lion teeth. Dandelion is frequently found, but it should not be collected anywhere because of pollution. For this reason, it is not recommended to grow this plant. If you keep this plant in a bucket, choose a container as deep as possible, because the plant developped extensive taproots.
In the kitchen: Dandelion has a long vegetation period that runs from March until autumn. The best time to harvest leaves is April to May, April to June for flowers, May to June and September for seeds and early autumn or spring for roots. The edible flowers are sweet and are a lovely edible decoration. You can also make dandelion jams or syrups with it. The leaves have a rather pungent and spicy taste. However, the older the leaves, the more bitter substances they contain. Young leaves should always be chosen for this reason. In the kitchen, dandelion is the main ingredient or a complement to salads, pestos, smoothies, vegetable stews, risotto and gratins. The leaves are especially delicious in salads with other aromatic herbs, such as basil, lemon balm or thyme and nuts, pine nuts or hazelnuts that are briefly roasted before. Dandelion is also an intense alternative to basil pesto. To do this, fresh dandelion leaves are ground with roasted pine nuts and good oil in a mortar, then mixed with pecorino and a little salt.
