The big green artichoke of Laon is a rustic variety providing large, broad buds with spreading scales, fleshy, entirely pale green except at the base where they are slightly tinted with purple. This ancient variety of vegetables is cold-resistant, provided that you protect the foot well during the winter with straw or tarpaulin. Very cultivated in the northern half of France, it is highly appreciated for its delicate flavor. A vegetable of the past that is increasingly found in vegetable gardens. SOIL CHOICE: Artichoke loves fairly strong, deep and fresh lands. Sunny exposure. SEEDING: Sow artichoke seeds from February to April, in a terrine, in a box or in a bucket by putting one seed every 3 cm. Cover with fine potting soil. A month later, when the plants have 5-6 leaves, put in 10 cm buckets to “harden” the seedling. Set up at the end of May, leaving at least 1 m between each plant. CULTURE: Water copiously in dry weather and mulch the soil, covering it with well-rotted manure or grass clippings to retain moisture. HARVESTING: When the flower heads have reached a sufficient size, cut them with a sharp knife. Can be stored in the fridge for a few days. TIPS: We consume the artichoke raw or cooked, with salt, with a dressing or mayonnaise.
